Tasting Notes: Intense nutty cup with notes of roasted hazelnuts, peanuts and walnuts. Creamy body lingers with sweet honey and caramel notes.
Background: Roman Villeda Aguilar began as a small producer of coffee, over time his produce has grown gradually. Leaving other income items, he found the economic security and personal satisfaction farming organic coffee. During harvest when the coffee is at its optimum ripeness, the product is collected manually by men and women, carefully to collect only ripe fruits. Then is transported to COCAFELOL where the coffee is pulped, washed and dried and then when coffee is in the 12% humidity is sent to Beneficio Santa Rosa to finalize the export process. After harvest, coffee waste is used to make organic fertiliser; with pulp developed compost processed by Californian red worm. The mucilage is used to make different products that serve as foliar fertilizer to farms. Such organic fertiliser has also helped the plant with Roya. It has promoted environmental conservation, development and growth of coffee cultivation in the area.
